In a small sauce pan, melt butter with oil. Stir in garlic and cook over low heat for 2 minutes to release flavor. Add lemon juice. Open cans of Premium Catch of the Sea Albacore tuna, drain liquid into sauce pan and stir. Then carefully place Catch of the Sea Albacore tuna on a bed of hot rice and pour sauce over this. Sprinkle with pepper. Top with lemon peel and serve.
Place in broiler for 2 minutes to heat and brown the tuna.
This recipe also works well with lime.
Makes approx. 4 servings.
