Wash lettuce and escarole gently. Pat dry or spin in salad spinner. Cut greens in thin strips. In a small bowl, add vinegar, oil, garlic, and capers. Whip until smooth and add Premium Catch of the Sea tuna. Mix the tuna into the olive oil vinegar mixture until fairly uniform. In a salad bowl, combine the romaine and escarole. Add the tuna/olive oil/ garlic mixture over the top of the greens and mix until the greens are lightly but evenly coated. Salt to taste and serve immediately.
If preparing this dish ahead of time, store the greens and tuna mixture separately and mix together just before serving. Remember that the juice in the can contains a lot of good nutrition. It is the tuna's own natural juice, nothing added.
